On Tuesday, September 16th we hosted our 4th (sort of annual) Pigs & Pinot Wine Dinner and I'd like to say it was our most creative yet. Chef Kayla had full rein on the playful, pork-driven menu while Andy Powell of Winebow curated the wines. The result was an intimate evening that leaned more fun than fancy, with pairings that kept guests smiling from start to finish.
Menu + Pairings
Opening Wine: Crémant de Loire Rosé ($22.99)

Garzón Rosé ($22.99) Al Pastor Tacos with Shredded Cabbage, Pickled Onions, Cotija Cheese, Jalapeño Lime Crème & Cilantro
Cristom Pinot Noir ($42.99)Rosemary Pork Tenderloin with Maple Bourbon Onion Jam, served with Braised Kale
Dessert: Mini Cheesecake topped with Candied Bacon

Pairing Pork + Wine: A Quick Guide
One of the biggest takeaways from the night? Pork is a dream ingredient for wine pairing. Here’s a simple cheat sheet inspired by our dinner:
Prosciutto or Charcuterie → Pair with Pinot Gris. The crisp, refreshing style balances the saltiness and refreshes the palate.
Pulled Pork with BBQ Sauce → Pair with Zinfandel or Pinot Noir. The smoky-sweet sauce loves juicy red fruit and a touch of spice.
Pork Loin with Herbs → Pair with Whole Cluster Pinot Noir. The wine’s acidity cuts through the richness, while its crunchy earth tanins complement herbs.
Sausage & Peppers → Pair with Chianti or Grenache. The savory, slightly spicy flavors need a red with earthiness and just enough acidity.
Glazed Ham → Pair with Riesling (off-dry). The touch of sweetness in the wine balances the salt and glaze beautifully.
