February Wine Club: Wild, Honest Wines from Southern France & Spain (and one from Oregon, just for fun)

This month’s wine club is a love letter to the rugged hills of the Languedoc and the windswept vineyards of Spain. These soulful, small-production wines speak clearly of place, tradition, and thoughtful farming. Expect freshness, texture, and just enough wildness to keep things interesting. And because we couldn’t resist, we’ve also included a Willamette Valley Pinot Noir made without added sulfites—pure, vibrant, and proof that nothing is missing when the fruit speaks for itself.
Mas des Cabres
Located in the foothills of the Cévenne mountains of France, Mas des Cabres makes unique wines that reflect their specific limestone and red clay terroir, located where the Languedoc comes together with the Rhône Valley. Their philosophy is to minimize intervention from the vines to the cellar, so as to let the wines express their true nature.
RED: Languedoc Sommières Libres Pensées Rouge - So much elegance, depth and character is found in this cuvée of unknown lands. The vinification and aging are here simple, with the simple pursuit of balance placed first.
ROSÉ: Languedoc Estive Rosé - A pale rosé where smoothness is fully expressed. Sweet notes of Muscat, cherry and raspberry dominate the nose and the palate.
WHITE: Pays d’Oc Blanc Estive - The nose reveals notes of pineapple, lemon and pear. The well-balanced palate is mineral rich and retains much freshness.

Vera de Estenas
Vera de Estenas is a historic estate in southeastern Spain’s Utiel-Requena, championing the Bobal grape with a focus on balance, freshness, and complexity. While Bobal was once used mainly for simple wines, quality-driven producers like Vera de Estenas are revealing its true potential, with notes of bright plum, spice, and earthy minerality. Founded in 1945, the estate farms 47 hectares of high-elevation vineyards with calcareous clay soils that help preserve acidity and structure. Today, under Félix Martínez, the winery produces elegant, expressive wines from Bobal vines up to 100 years old.

Can Sumoi “Muntanya” – Traditional Method Sparkling, Spain
Fresh, mineral-driven, and beautifully textured, this sparkling wine shows green apple, citrus blossom, and fine bubbles with a crisp, dry finish.
Why we love it:It delivers elegance and energy—perfect for celebrations or elevating everyday moments.
Pair with: Oysters, fried foods, salty snacks, or as an aperitif.

Primarius 2023 “Sans Soufre” Pinot Noir –
Willamette Valley, Oregon
“Sans Soufre” means no added sulfur, allowing this Pinot Noir to express itself with total transparency. Light ruby in color, it opens with bright cherry, wild strawberry, and rose petal, followed by subtle earth and spice. The texture is silky, with lively acidity and a clean, energetic finish.
Why we love it:It captures everything we love about Willamette Valley Pinot Noir—purity, elegance, and finesse—while showcasing the raw beauty of minimal-intervention winemaking.
Pair with: Salmon, roast chicken, mushrooms, or simply enjoyed on its own.
