Event Recap: Treveri Sparkling Wine Dinner — A Night of Bubbles & Pre-Holiday Magic

Last Thursday, we kicked off the holiday season the only way we know how: with bubbles in hand, good food on the table, and the actual winemaker hanging out with us. Treveri Cellars joined us for a four-course sparkling wine dinner, and Winemaker Christian Grieb led us through a tasting that was equal parts delicious and informative.
The whole night was made for people who love great flavor, good stories, and a little sparkle in their evening.
The Menu
Chef Kayla crafted a menu that paired beautifully with each wine, creating moments that were surprising, playful, and incredibly satisfying.
The dinner became a gorgeous pre-Thanksgiving treat — and a fun way to discover sparkling wines that will absolutely shine on holiday tables this season.
Crab Rangoon Dip with Wonton Chips
Wine Pairing: Blanc de Blanc Zero Brut Bright, crisp, and clean — the perfect opener that set the tone for the evening. This wine is bone dry with a subtle creamy note that paired perfectly with the luscious dip.
Seasons Crossings Salad
strawberry • pistachio • cranberry • citrus
Wine Pairing: Rosé Brut Festive, fresh, and beautifully balanced. The rosé brought the salad to life.
Seared Duck Breast
fig-syrah reduction • butternut squash purée
Wine Pairing: Syrah Brut This wine was one of the night’s true showstoppers. A sparkling syrah — a rarity in the wine world — brought jammy richness and structure that paired stunningly with the duck.
Crème Brûlée Mini Cheesecake
Wine Pairing: Gewürztraminer Demi-Sec Fragrant, lightly sweet, and an absolute dream with dessert. Another delightful surprise of the evening.

About Winemaker Christian Grieb
Christian grew up immersed in Washington winemaking, learning the craft from his father, Juergen. After earning his BA in Business Administration from Seattle University, he returned to the cellar combining both business acumen and creative drive.
His passion, precision, and warmth made tasting with him a highlight of the evening.
